Apple Pie Cupcakes

The craze for miniature desserts cannot outgrow cupcakes, or rather  apple pie cupcakes . For this reason, below we offer you the recipe so that you enjoy them and encourage yourself to make your own versions.

Now, unlike other desserts that are made only with flour and sugars, these cupcakes  are a great alternative, given their main ingredient: apple.

The apple has a high content of pectin, a type of soluble fiber highly appreciated in gastronomy for its thickening properties.

And from a nutritional point of view, this fiber is very beneficial for health, especially because it helps regulate cholesterol and blood sugar.

This fruit contains vitamins A and E, potassium, calcium, boron and antioxidants that help, above all, to take care of gastro-intestinal health.

Now, our recipe is inspired by the apple pie that was born in Europe and is related to the American apple pie and the French tarte tatin .

Apple pie cupcakes recipe

Apples

Ingredients for cupcakes

  • 2 apples.
  • Juice of 1 lemon.
  • Nutmeg (to taste).
  • 3 medium eggs (180 g).
  • 1/2 cup of liquid milk (50 ml).
  • 2 cups of brown sugar (200 g).
  • 1 tablespoon of ground cinnamon (10 g).
  • 2 teaspoons of vanilla essence (10 g).
  • 1 cup of vegetable oil or butter (100 g).
  • 2 cups of sifted pastry flour (200 g).

Ingredients for topping

  • 2 egg whites.
  • 1 cup of cream cheese (100 g).
  • 4 cups of powdered sugar (400 g).
  • Ground cinnamon (to taste)

Ingredients to prepare cupcakes.

Preparation

  • With the mise en place ready, we proceed to wash the apples well.
  • Now, we cut the apples and discard the core and seeds. We cut into slices.
  • We reserve in a saucepan with fresh water, but first we add a splash of lemon juice so that they do not oxidize.
  • Meanwhile, we preheat the oven to 180 ÂșC.
  • Now, we take a large bowl and put the butter. With an electric mixer at high speed, we begin to whiten the butter.
  • Add the sugar little by little and beat for five minutes or until the sugar has dissolved.
  • Add the eggs one by one, continuing to beat the mixture for our apple pie cupcakes .
  • Now, we add the liquid milk.
  • We sift the flour and slowly add it to the preparation.
  • Finally, we add the chopped apples, ground cinnamon, vanilla essence and nutmeg.
  • We mix everything with enveloping movements.
  • We prepare the mold to bake cupcakes (with cups) and fill them up to 2/3 of their capacity.
  • We take to the oven for 30 minutes or until they have a golden coating.
  • Once the apple pie cupcakes are ready , we let them rest while we prepare the cream cheese and cinnamon topping with which we are going to decorate them.
  • In a large bowl, place the egg whites and beat until stiff.
  • Add the powdered sugar little by little until you get a firm meringue.
  • We put the butter and continue beating. Lastly, the cinnamon powder.
  • If necessary add more powdered sugar, do it. It is important that the meringue is thick and let it rest for a while in the refrigerator so that it takes consistency.

The variant with vanilla

These rich  apple pie cupcakes can be made in other ways ; for example, with a vanilla sponge cake, filled with an apple compote.

We bring to the fire together with 100 grams of sugar, add the touch of cinnamon and nutmeg and once ready, we fill the cupcakes with this compote or add a little on the topping.
