Peach cheesecake

Recipe 1:

You will only need half an hour to have this delicious cake ready. The ingredients for four people are:

Ingredients

  • 4 peaches
  • 250 g of gingerbread
  • 100g butter
  • 30 g of brown sugar
  • 500 g of white cheese (cottage type)
  • 1 pot of natural yogurt
  • 100g sugar
  • 1 lemon
  • 2 egg whites
  • 6 gelatin sheets

  • To start, let the white cheese drain for 12 hours (overnight).
  • The next day, remove the crust from the gingerbread and mash. Then add the butter in pieces and the brown sugar, keep stirring.
  • On the other hand, grease a baking tin and pour the previous preparation. Put in the fridge for a few minutes, meanwhile continue with the recipe.
  • Mix the gelatin sheets with water as directed on the package.
  • Then peel and cut the peaches in half, remove the pits and dice again into large cubes.
  • Squeeze the lemon juice and grate its rind, drizzle the liquid over the peaches.
  • Next, add the drained cheese with the natural yogurt, half the sugar and the lemon zest in a container.
  • Next, drain the gelatin sheets and whisk the egg whites with the remaining sugar.
  • Pour in the melted gelatin and then the peaches, stirring everything very well.
  • Later, remove the base of the cheesecake from the fridge and spread the previous preparation. Then put it back in the fridge for six hours.
  • To finish, remove from the mold on a tray and serve as cold as possible.

Recipe 2:

If you have guests dining at home, you can prepare this peach cheesecake option, which yields more number of servings.

Ingredients

  • 2 cups of Maria type cookies
  • 2 tablespoons of melted butter
  • 600 g cream cheese
  • ¾ cup of sugar
  • 1 sachet of unflavored gelatin
  • 1 tablespoon of vanilla essence
  • 2 tablespoons of water
  • ¾ cup of heavy cream
  • 1 can of peaches in syrup

Preparation

  • First, crush the cookies with a mortar or food processor. Then add the melted butter and integrate.
  • Place this mixture as the base of your cheesecake on a plate or mold and put it in the fridge.
  • On the other hand, beat the cream cheese with the sugar in a bowl.
  • In another container, integrate the milk cream with the vanilla extract.
  • Dissolve the gelatin as indicated in the instructions and add the vanilla to the cream. Mix well and then pour the cheese with the sugar.
  • Next, remove the base from the fridge and fill with this cream. Put it back in the fridge for two hours.
  • Cut the peaches into cubes and when the cheesecake is firm and very cold, spread on top. To finish, take advantage of the syrup to decorate and give it more flavor.

Option 3:

Ingredients

For the base:

  • 1 cup of Maria or vanilla type cookies
  • 2 tablespoons sugar
  • 2 tablespoons melted butter

For the cheesecake:

  • 2 cups cream cheese
  • 1 can of peaches in syrup
  • ½ cup of sugar
  • 2 eggs
  • 1 pot of peach or natural yogurt
  • 1 Teaspoon vanilla extract

Preparation

  • First mix the ingredients of the base, with the well crushed cookies. Then, pour the mixture into a baking dish and cook for 12 minutes. Let it cool on the counter.
  • For the cheesecake, beat the cheese with the sugar and the vanilla essence. Then add the eggs and mix well.
  • Pour in the yogurt and dice the peaches.
  • Integrate everything well and cover the biscuit base with this cream.
  • Next, bake for 1 hour, remove and let it cool down to room temperature.
  • Finally, put it in the fridge and leave it for at least 12 hours before serving, this way it will take on consistency and the flavors will be integrated.
