Preparation

1. Raspberry syrup

  • Start your raspberry filled chocolate truffles by making the raspberry syrup first. Especially since it is the step that will take you the most time.

  • Then strain the juice to get rid of the large particles of the fruit and put it in a saucepan.

  • Slowly begin to add the raspberry syrup that you just made.
  • So, little by little, put the powdered sugar.
  • Put the bowl in the fridge and let it chill for 20 minutes. In this way, the chocolate will acquire consistency, but do not overdo it, as it must be kept creamy. So you can shape your truffles easily.
  • Take a piping bag with a wide nozzle and fill it with the chocolate mixture.
  • Line a tray with parchment paper and begin to make mounds with the sleeve.

  • When you have finished placing the truffles, put them in the fridge for an hour to allow the chocolate to finish compacting.
